When you send a raid on someone's city (after you have spied of course and have checked for sure that there are more than 50K of resources) 30 secs (or 20 secs if you want) before the raid happens you click on their city, click the send resources option and your galleys will start heading towards the city you are going to raid. So after the raid is completed you cancel the galleys (since you have 40 secs to cancel any action including the galleys) and you get more resources from a single raid. Depends on the capacity of your galleys though.

For example if you have 20K galley capacity you will get 50K+20K=70K of resources from a single raid.

It was also helpful to me understanding early on that the "tricky" part of the galley trick is the quick recall, the additional 50k resources allowed are based on a simple rule that applies to resource transfers in general:

"[Y]ou are limited to an exchange of 50,000 resources per week with a player (in one direction). However, if the other player sends resources back (perhaps of a different type), that frees you to send more than the 50,000. You simply cannot have more than a 50,000 difference between your trades. Raided resources count against this limit." from SWOE Wiki

All the galley trick does, is pretend to change this exchange balance.
