You can check your prograss in clan section. May you need to fight more in arena or fight more in dungeon.
I have never gotten 3stars for clan activity since I've started this game. Apparently clan activity resets at 11:00. Why is that?
This is ruining my mission completion. Stuck at this mission level now! 
Clan activity should reset at 00:00 like everything else in this game.
Then players don't have to worry about losing sleep just to get the clan activity done.
Encourage them to change the game to reflect these changes!
Are you guys fighting in the Arena? The requirements for 2/3 stars include fighting in the arena 6/12 times. So if you just do the 5 arena matches for the daily quest, you won't get any extra stars.
If you click or tap on the icon to the left of the clan activity progress bar, it'll tell you exactly what you have left to do. If that says everything is completed, then it's a bug. Screenshot it and send a bug ticket.
I cannot get the third star even through i checked of everything on the list, i checked in the clan Windows.

The clan boss play time counter its not same with daily playtime where you get enegy refill etc.. The CB playtime counter reset at 10:00AM utc like cb and the daily playtime is reset at 0:00 UTC everyday. You need to play more to reach 90min in cb.
Looks like there is a bug in the mobile version of the game, try using the PC version to clear this mission
