I would like to know why our 2 person clan of 18 Billion influence is matched up against a clan of nearly 800 Billion influence. No possible way we can win this. I think we are owed compensation in the amount equal to had we actually won this cvc.

Though they may currently not have any practical alternative I suggest going by influence is not really any guide to how well any draw might turn out.
Assuming yours is a real two person clan rather than one person with an alt, you might win if the opposition clan is a one man outfit or is dormant, or little time to play currently.You gave no indication of numbers just the total.
The difference in influence does seem wildly unfair, but it's not a rare occurrence or complaint.
Alongside this is my contention, that it isn't right that in competitions the levels required are exactly the same no matter how many are in the clan it's plain that the more in the clan the better the chance to reach the total needed.
sometimes someone(s) join after cvc and then influence goes way up ... except for in stronghold or traps or reinforce towns they do not affect the score.
