Um, most builds I have seen is Flawless Execution, because you want her at 100% critical and for her A3 single hit mainly. Other abilities are just fillers, not really serious damage.

my critical damage is at 172%, increasing by 20% doesn't seem like it adds much
are you sure its better than
giant slayer on a 4 hit A1
or decreasing defense 25% half the time?

GS on Spider is useless mastery for Coldheart. You bring her there for her Heartseeker, every other skill is either unreliable or insufficient to make a different. Her A1 is 4 hit at random, that makes GS on Spider just useless.
Your only choice there are either Helmsmasher or Flawless Execution. I can't really say which is better based only on personal experience and preferences. If someone comes up with extended test runs and very good explanation why one or the other mastery is better that may lead to some conclusions. Until then, I'm staying with my current choice Flawless Execution.
The reason why i picked that one is because i don't want to rely on chance 50/50 to get that extra +25% ignore defense mastery (which, btw is not "decreasing defense 25% half the time" as you say, but ignore 25^ of target defense", meaning more damage when it procs). Its just the way i set up my team there and I wanted to have as few variables as possible.
But both Helmsmasher or Flawless Execution are good choices there. GS on the other hend is not good for Spider.

DOH! forgot about that, was watching rhazin get multiple GS procs on the spider and thinking wouldn't it be great for coldheart?

It's Flawless Execution. I shouldn't need to persuade you on +20% damage on a 1+ million hit is more than an unlikely random proc on GS for 40-50k.

I agree on what Chosen_CF mentioned in one of his videos. When doing spider you want 100% winrate. Although helmsmasher migth do more damage it is not reliable and you dont want to lose a run because of bad rng.
Flawless execution might be less damage boost but it is reliable so you can build a team that win 100% with setup.
On a sitenote since we are talking about spider I have a 100% winrate with the following team. Dracomorph, miscreated monster, royal guard x2, coldheart. If I had another royal guard coldheart would probaly be out of the team. I use this team because it works on auto. If I wanted to do it manually I could take miscreated monster out and switch in a second coldheart.

Is this the same for Armiger? For those of less fortunate without coldheart? I really need to look closer at my Armiger build, but I'm only through Spider 14 so tabling that for now.

fwiw, i pulled coldheart a week after I took armiger to 6* :(

Well, she needs 70% crit rate and 250% crit dmg.
Btw I prefer Helmsmasher.
