How many 4/5* food champions should I have banked for fusions?

I finally realized the importance of holding resources and am keeping 20k silver, 2k gems in the bank and holding books, brews, and potions https://vidmate.onl/  . I can't figure out how many champions I should have leveled in the bank to save up for champ training tournaments/events.

Judging by those other numbers, I'm guessing you're a "relatively" new player. The short answer to your question is "as much as you can", but the long answer is a bit more complicated.

Saving food for fusions absolutely helps make champ training easier - but it also means your account isn't progressing at all in the interim. And if the consequence of that is you're not able to do the correct dungeon levels, or that your CB team is weaker than it should be, or that you aren't progressing through DT, or etc etc etc, then that may very well outweigh the benefits of making the fusion easier.

So - tl;dr - save what you can, but don't do so at the cost of progression.

I try to keep as many as I have room for.

If I am going to pull shards then I just feed a few off.

Since I tend to level new champions in 12-3 I seem to always have a ton of Incubus in the vault.

Keep fat chickens in the vault, skinny chickens in mailbox.  Alleviates some of the space crunch.
