I’ve read through the forms about this, and couldn’t find an answer.
I have multiple champions at level 40. In trying to get to 50, the “just use 4 level 4* champions to upgrade” doesn’t seem to work. Are there additional requirements I am not aware of? Do they need identical ascension? most of my 4 * champions are grayed out.. thanks!
Those grayed out champions are locked. If they are Epic rarity, or higher, they are automatically locked when they are summoned. There should be a mini lock / unlock icon in the lower left hand side when you click on them in the champions page. Click on that icon to unlock / lock them. Make sure that they are champs that you don't want of course. You can also farm up 1* 2*, and 3* champs to feed into your 4* and 5* champs.
I see that you have padlocks on all of yours chempions.. Just open them
Still doesn’t explain what the locks purpose is, is it some kind of fail-safe so you don’t trade anything away
I would advise caution here.
Do not waste *4 level 40 champions as food. Food champions should be left at level 1, regardless of their rank. The result is the same, but you won't waste the energy you spent to level them up.
Do not sacrifice your Epics. Don't sacrifice your Rares, unless you know exactly what are you doing.
I see Tayrel and Zargala. Either of them is much much better than Shaman. Do not waste your resources on Shaman. Furthermore, get your starter champion to *6 / level 60 as soon as you can, unless you get a better Campaign farmer.
There's also a Steelskull, also good champ and well worth using. I hope the lack of a starter champion in the screenshot doesn't mean that you've sacrificed your starter...

If the starter is 3 star or 5-6 star, he or she won't show for Upgrade Rank of a 4 star.

Oh right, of course. Was looking at the champs but without looking too closely at where in the game exactly the screenshot was taken. Never mind then.
