It's order of operations,

What's happening there is hes getting hit with with multi-hit attacks

The first hit *would* do enough to kill him, but his passive keeps him at 1 hp and transforms him.

Then the next hit in the multi-hit attack kills him.

It's just that the animation for his transformation doesn't start until after the animation from the attack finishes.
